Most people are unaware that many processed foods contain insects and they consume them without their knowledge or consent. However insects present an extraordinary source of excellent quality protein and they have a very low environmental impact. At 100% Lise Coirier will present an innovative approach to desserts using this unexplored foodstuff: insect pralines. Her chocolate shop will present different candied insects, each with it’s own fascinating story.
